Culinary Creations: Chile at its Best
Chile’s passion for food and wine take center stage on this wonderful excursion of hands-on cooking classes and winery tours, punctuated by explorations of Chile’s historical architecture and German-style alpine villages.
After disembarking in Valparaiso, you will accompany a local guide and chef to the fish market at Caleta Portales. Here, you will pick up all the necessary ingredients to prepare the traditional Chilean dish “Caldillo de Congrio,” a dish so culturally important that Nobel Prize-winning Chilean poet Pablo Neruda wrote an ode to it.
Then, it’s on to the Cardonal Green Market, another bustling marketplace with stands overflowing with fresh, locally grown fruits and vegetables. As no traditional meal is complete without an aperitif, the chef will purchase the ingredients for the ritual preparation of Chile’s iconic Pisco sour.
Afterwards, the chef will continue on to prepare the kitchen for your cooking class, while you explore Valparaiso, a city whose architecture earned it a UNESCO World Cultural Heritage distinction. During the tour, you will meander through the hilly old part of Valparaiso, as well as the impressive downtown section.
You will also ride two “ascensores” or funiculars; one of them climbing to the top of Concepción Hill, an area revered for its boutiques, mansions and restaurants. The chef will be waiting at the Hotel Gervasoni, where everything has been arranged for your culinary experience.
Following your immersion into Chilean cuisine and additional time to further explore this part of Valparaiso, you will check in to the Hotel Gervasoni to spend the evening. Dinner is on your own.
After departing from the hotel, you will travel east into the beautiful Casablanca Valley, a wine-producing area since 1875. The growing conditions are ideal and similar to those in California’s Napa and Sonoma valleys. The valley is oriented in such a way that daily ocean breezes cool the grapes on the vine and result in intensely fruity wines.
Here, you will visit two signature wineries in Casablanca: William Cole and nearby Casas del Bosque. You will enjoy tours and tastings at both wineries. The white wine produced in the Casablanca Valley is particularly noteworthy.
Following the winery tours, you will visit the esteemed Puro Caballo Ranch, where you will discover the unique qualities of the Chilean horses and watch the gauchos skillfully ride them. Then, after a pisco sour cocktail near the stables, you will enjoy a traditional Chilean barbecue lunch featuring various grilled meats. You will also learn how to prepare the meal.
Then, it’s on to Santiago for a panoramic tour of the city, during which you will see the Presidential Palace and main square downtown, among other attractions. After checking in to the Hotel Noi Vitacura, the remainder of the day and evening is at your leisure, with dinner on your own.
After breakfast, you will check out of the Hotel Noi Vitacura and transfer to the airport to fly to Puerto Montt. Upon arriving, you will be met by a local guide and begin a panoramic tour of the city. One of the highlights is the city cathedral, which was built of wood in 1856 and topped with a copper cupola.
Departing from Puerto Montt, you will head towards Frutillar, an area where many Germans settled beginning in the 1850s. The majority of the houses were built in a style reminiscent of those in Germany’s Black Forest region. Upon arriving at the Se Cocina Restaurant, which overlooks Lake Llanquihue, you will participate in a hands-on cooking class and then dine on the traditional dishes that you have prepared.
Afterwards, you will drive along the Pan-American Highway to Puerto Varas, another city known for its alpine, German-style architecture. It too overlooks Lake Llanquihue, where the perpetually snow-covered Osorno and Calbuco volcanoes are reflected in the lake’s clear waters. Following free time to shop and explore the handicrafts market near the main square, you will transfer to the pier in Puerto Montt and embark the ship.
