To their surprise, they enjoyed the unique flavor, and after the initial supply was exhausted, they began recreating it. Thus, Ponce Livornese was born, becoming a favored digestif after a hearty meal.

This beautiful building is a prime example of market architecture in Italy, located right by the river's bank. Boats deliver fresh fish directly to the market's basement, where vendors keep their produce and cheeses fresh in underground cellars.
