During a storm, the rum barrels, poorly stowed atop the coffee bags, broke and soaked the beans. Once the ship docked, the rum-soaked beans, deemed ruined, were sold cheaply to the stevedores. To their surprise, they enjoyed the unique flavor, and after the initial supply was exhausted, they began recreating it. Thus, Ponce Livornese was born, becoming a favored digestif after a hearty meal.

This beautiful building is a prime example of market architecture in Italy, located right by the river's bank. Boats deliver fresh fish directly to the market's basement, where vendors keep their produce and cheeses fresh in underground cellars.
